The taste is spicy and sweet and salty at the same time with a hazelnut aroma. The oyster is harmoniously meaty; both tender and crunchy at the same time, just like a good steak. How the oyster is cultivated At the end of the 19th century, Henri Gillardeau, the founder of Gillardeau, became passionate about the flat oysters of Marennes at a very young age. Thirty years later, with the help of his wife, we find him at the head of an oyster farm that was applauded for its modern and dynamic management. In the 1940s, Jean Gillardeau and his wife take over this family business. In 1978, Gérald Gillardeau decides to produce and commercialise ‘’Spéciales’’ oysters. Gérald Gillardeau produces this oyster in a way that respects the methods and expertise of his forefathers. They still select their oysters with the greatest care: they have to be regularly shaped, round and of a certain volume.
