We work together with French oyster farms that have many years of experience and have won a reputation for expertise. At present, we import 41 different types of French oysters from the following 5 districts and from Ireland.

Nog steeds komt één op de vier oesters die in Frankrijk wordt geproduceerd uit Normandië. De kustwateren bij Normandië hebben de grootste getijdenverschillen van Europa: tot wel 16 meter. Door die enorme getijdenverschillen vindt u hier de echte Normandische oesters. De oesterkweek wordt bepaald door het ritme van eb en vloed. Doordat de stromingen zo krachtig zijn, kan de oester zich er moeilijk voortplanten.
 
De kust van Normandië is enorm lang, van de Belgische grens tot aan de Baai van Mont-Saint-Michel en kent grote verschillen. Het landschap lijkt veel op dat van Ierland, Wales en Engeland.

The pearl of Adri & Zoon: Huître Spéciale Gillardeau.

The taste

The shell is a combination of a beautiful white and mother-of-pearl. The taste is spicy and sweet and salty at the same time with a hazelnut aroma. The oyster is harmoniously meaty; both tender and crunchy at the same time, just like a good steak.

How the oyster is cultivated

At the end of the 19th century, Henri Gillardeau, the founder of Gillardeau, became passionate about the flat oysters of Marennes at a very young age. Thirty years later, with the help of his wife, we find him at the head of an oyster farm that was applauded for its modern and dynamic management.
In the 1940s, Jean Gillardeau and his wife take over this family business. In 1978, Gérald Gillardeau decides to produce and commercialise ‘’Spéciales’’ oysters. Gérald Gillardeau produces this oyster in a way that respects the methods and expertise of his forefathers. They still select their oysters with the greatest care: they have to be regularly shaped, round and of a certain volume.

Adri & Zoon is present five days a week at all Dutch, Belgian Danish and Norwegian fish auctions. We personally purchase all of our fresh fish and we transport the products in the Netherlands and Belgium using our own fleet of vehicles. Outside the Netherlands and Belgium, the purchased fish is delivered to us within 24 hours by our shipping partners. The fish arrives at our plant in less than 2 hours after it has been purchased at auction. Next, we deliver all orders within 12 hours from receipt of the order.

Adri & Zoon now also offers sole! Sole owes its name to its rounded oval shape. In addition to this striking shape, the sole can be identified by its rough skin. Its refined taste and the texture of the flesh makes it a popular type of fish. The flavour is sublime, refined and truly caresses the tongue. Sole is delicious when fried, grilled or steamed.

Availability
​The sole is at its best from August to December. All grades are available ranging from very small to large and in various quantities. If required, we can also remove the skin and fillet the fish for you.

The monkfish is hardly a handsome fish, however the refined taste of its flesh more than compensates for its ugliness. Its flesh tastes like lobster and langoustines. This fish, which is also known as the Angler Fish or Frog-Fish, has no bones and only cartilage in the tail section. So the tail section is the most commonly available part of the fish.

​The monkfish is at its best from May to January. The tail sections are available in all grades to suit your requirements in packs of 3, 10, 20 and 40kg

Together with the turbot, this attractive fish is one of the more luxurious fish varieties. Contrary to the turbot, the brill does not have tubercles on its skin. This fish is a true delicacy. The brill mainly eats shrimps and fish, giving its flesh a characteristic, delicate taste. The best examples are caught using the ‘twin rig’ or ‘fly shoot’ method.

​This fish is at its best at the end of the summer and in the winter.

Mullus surmuletus

Red mullet is a delicious summer fish. It is most readily available in the summer. It owes its delicious flavour to a high fat content. ‘Fly shoot’ mullet is the finest, freshest and most sustainably caught type. So this is the type that we purchase mostly.

Merlangius merlangus

Whiting was long considered to be a food only fit for cats, but that has not been the case for some time now. Whiting is increasingly eaten and appreciated by consumers. It is a fantastic fish which is used for many different purposes.

Availability
​The whiting is at its tastiest in the summer months when it has eaten its fill of crustaceans and molluscs. Our ‘fly shoot’ whiting is available in all grades to suit your requirements in packs of 3, 10 and 20kg. You can also order filleted whiting from us (large).

Turbot
Psetta maxima

This turbot has the same name as Maxima, the Queen of the Netherlands. It is truly a regal fish. In addition to the brill, the turbot is also a luxurious fish variety. The tubercles on
the skin of the turbot are its main identifying feature. This delicacy can be found on the menu in many top restaurants. In general, this delicious fish is somewhat more expensive due to limited supply.

Availability
​Like all other Dutch flatfish, the turbot tastes best in the period from August to December. All grades are available to suit your requirements in packs of 3, 10 and 20 kg.

Lemonsole
Microstomus kitt

Lemon sole is identifiable by its smooth brown skin and yellowy orange gill markings. This fish is also known by various other names and likes to live in a type of seabed that mainly consists of stones and rocks. It is a tasty fish with a slightly sweet flavour.

Availability
​Lemon sole is at its best from August to April. All grades are available to suit your requirements in packs of 3, 10 and 20 kg. We can also supply lemon sole that has been filleted or skinned.

Raja clavata 

Smooth and freshly caught ray is what we like best! We can deliver this high quality to you. The fine taste and agreeable structure of the flesh are appreciated by many. The ray is at its best from May to December.

Availability
​All grades are available to suit your requirements in packs of 10, 20 and 40kg. In addition to the complete fish, ray wings with or without skin are also available. We process this product in our own filleting facility. 

Peter's Fish
Zeus faber

This fish is so unusual in appearance that it could be a prehistoric species. It has a striking round spot on its body, which is reminiscent of the sun. The Peter's fish is known for its special flavour. When cooked, the flesh lightens in colour and takes on a delicious shrimp- like taste.

Availability​
The Peter's fish is at its best in the summer months. All grades are available to suit your requirements in packs of 3, 10 and 20 kg

Met zijn prachtige kleuren is deze vis een echte ’beauty’ te noemen! Deze vis wordt ook wel ‘Knorhaan’ genoemd, omdat deze een knorrend geluid maakt zodra deze boven water komt. De Rode Poon gevangen met de Fly Shoot methode, is van de beste kwaliteit. Deze wordt dan ook hoofdzakelijk aangekocht door ons. De beste tijd om deze overheerlijke ‘ beauty’ te nuttigen is in de zomer.

Mullet... the thicklip grey mullet in this case. This is the tastiest of all of the mullet varieties. This fish is at its best from the beginning of the summer to the end of January. We have a distinct preference for examples from the Wadden Sea and the Oosterschelde. Line- caught fish do not taste earthy and are of high quality.

The horse mackerel is mainly eaten in southern Europe. However you can also be sure of seeing this variety of mackerel on market stalls in the Netherlands. It is a very tasty fish, particularly when barbecued or grilled.

Dutch anglers call this fish ‘Vadertje Glasoog’ (Father Glass-eye). When fresh, the pike- perch has beautifully clear eyes that look like glass. The fish is caught using traps and fishing lines. A true Dutch product with a pure taste directly from the IJsselmeer. The firm, cream-coloured white flesh is full of flavour and a real treat. Delicious when fried, grilled or steamed.

Availability
​The fishing season is closed in April and May, but pike-perch are readily available throughout the rest of the year. All grades are available to suit your requirements in packs of 3.10, 20 and 40kg. Obviously, we also skilfully remove the scales from our hand-cut fillets.

Trachinus draco ​

Beware of the weever! It is one of the most poisonous animals in Europe. While the weever's sting is not deadly, it is very painful. Even so, it is a delicious fish. Supply of the weever is irregular; the best availability is from August to May.

With its orange spots, this plaice is an attractive fish. The connoisseurs among us can recognise plaice by its odour alone. The plaice is at its tastiest and fleshiest as soon as the first spawn has been produced. This is the case in the months of August and September. Remnants of shellfish are often found in the entrails of the plaice. This delicious taste of shellfish is also echoed in the flesh of this variety of plaice.

​All grades are available to suit your requirements in packs of 3, 10, 20 and 40kg. Fresh hand-cut fillets are available in packs of 3 and 5kg. These fillets are taken from the largest fish: grade 1 plaice.
