Gilthead Bream
Sparus aurata
The gilt-head bream is fairly easy to farm and large volumes have been produced in Turkey in recent years. The fish is either farmed in the open sea or in basins on the shore. The farm-raised gilt-head bream can be distinguished from wild sea bream by the gold-coloured band between the eyes. Its skin is a clear silver in colour and the fins are dark. This flesh of this fish has a high fat content and is most comparable to farm-raised seabass in terms of taste.
